Ingredients:

  • 100gm of French beans cut into 3inch long pieces
  • 2 carrots cut into match stick pieces
  • 100gm cherry tomatoes
  • 2 potatoes peeled and cut into thin circles
  • 5-6 pieces of asparagus cut into 3 inch long pieces
  • 10-12 snow peas or more as per your choice
  • Different coloured bell peppers cut into long strips
  • 1 cup chopped ice berg or ordinary lettuce

 For the batter:

  • 3 cups of fermented idli batter
  • Oil for deep frying
  • 3 tsp of spring onions or chives cut very finely – optional
  • Salt to taste

 

Method:

  • Sprinkle salt on all the vegetables and keep aside for 10 minutes.
  • You can use any vegetable of your choice besides the ones mentioned above.
  • If you like your vegetable tender then you could blanch the vegetables in hot water for only 1 minute and keep aside.
  • But if you like your vegetables crunchy then you can fry these without blanching.
  • Heat enough oil for deep frying.
  • Place the idli batter in a big pan or vessel, add salt to taste and beat with your fingers to make it fluffy.
  • If you are using spring onions or chives to give a tinge of green to the batter, add the greens at this stage.
  • Once the oil is heated, drop the vegetables a few at a time and fry in the oil, turning once and fry till the vegetables are crispy and a very light golden brown.
  • Serve as a starter or snack.
