Preparation time: 5 minutes Cooking time: 10 minutes  300 g/10 oz. lean beef fillet, finely sliced  1 red onion, cut into thin  Wedges  1-2 tablespoons Thai green  Curry paste  125 g/4 oz. mangetout, thinly  sliced lengthways  150 ml/1/4 pint water  small bunch of basil leaves  Preheat a nonstick work or large frying pan. Dry-fry the beef for 2 minutes, then remove with a slotted Spoon, leaving the juices in the pan. Reheat the pan and stir-fry the onion for 1 minute until softened. Add the curry paste and stir-fry for another minute or so. Now add the mangetout and water. Return the meat to the pan and stir-fry for A further 5 minutes. When the beef has cooked, throw the basil and stir-fry for 30 minutes. Serve Immediately with boiled rice, if liked.
