Preparation time: 5 minutes,  plus marinating Cooking time: 20 minutes  300 g/10 or skinless chicken  Breast, diced  1 tablespoon Cajun  Seasoning mix  2 tablespoon lemon juice  1 teaspoon olive oil  Coriander sprigs, to garnish  Place the chicken in a bowl and the seasoning mix, lemon juice and olive oil. Toss well and leave to marinate for 15 minutes. Meanwhile, soak 8 wooden skewers in warm water.  Drain the skewers and thread the pieces of chicken on to them. Cover the ends of the skewers with foil, place under a preheated medium grill and cook for 20 minutes, turning over halfway through cooking. When the chicken is cooked through, remove from the grill and reserve any juices. Remove the chicken from the skewers and garnish with coriander spring. Serve with the juices, a timbale of boiled rice and a green salad.
