Preparation time: 30 minutes  Cooking time: 1 hour and 20 minutes  Oven temperature: 180 C (350 F), Gas Mark 4  Ingredients as above  Carefully bone the drumstick and open out the joint. Chop the onions and carrots and mix together with the garlic. Spoon the vegetables along the boned side of the drumstick. Fold the joint over the tie with string. Place in a casserole or roasting tin and add the wine, thyme and bay leaves. Cook the joint, covered , in a preheated oven, 180 C (350 F), Gas Mark 4, for 1 hour 20 minutes and then continue, following step 3 of the main recipe.
