Preparation time: 10 minutes Cooking time: 20 minutes Oven temperature: 180 C (350 F), Gas Mark 4 4 cod fillets, weighing  125 g/4 oz. each Salt and pepper  50 g/2 oz. wholemeal breadcrumbs  2 tablespoons chopped dill  2 tablespoons chopped parsley 2 tablespoons chopped chives  2 tablespoons very low-fat fromage frais  2 plum to tomatoes, finely diced 2 tablespoons lemon juice  Wipe the cod fillets and season with salt and pepper. Place in a foil-lined roasting Tin, skin side down. In a bowl mix together the crust ingredients and spoon some on top of each cod fillet, Packing down gently. Cook in a preheated oven, 180 C (350 F), Gas Mark 4, for 20 minutes, covering with foil if the Crust is over-browning. Serve with French beans.
