When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chinese Chicken Sausage Rice Recipe

  • Boneless chicken cut into cubes 200 grams

  • Chicken sausages sliced 2-3

  • Basmati rice soaked for 30 minutes 1½ cups

  • Sesame oil (til oil) 2 tablespoons

  • Garlic chopped 1 tablespoon

  • Onion finely chopped 1 medium

  • Cornflour/ corn starch 1 tablespoon

  • Chicken stock 4 cups

  • Salt to taste

  • Crushed black peppercorns to taste

  • Button mushrooms sliced 5-6

  • Oyster sauce 1 tablespoon

  • Soy sauce 2-3 teaspoons

  • Vinegar 1 teaspoon

  • Fried noodles to serve

Method

Step 1

Heat sesame oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté on high heat till golden.

Step 2

Add chicken, mix and cook on high heat for 1-2 minutes. Add drained rice, mix and cook for 1 minute. Reduce heat and cook for 1-2 minutes.

Step 3

Take cornflour in a bowl. Add ¼ cup stock and mix well to make a smooth slurry.

Step 4

Heat remaining stock in a microwave for 1 minute.

Step 5

Add salt and crushed peppercorns to rice mixture and mix. Add remaining chicken stock, mix, cover and cook on medium heat for 5 minutes or till rice is halfdone.

Step 6

Add chicken sausage and mushrooms and mix. Add oyster sauce and soy sauce, mix, cover and cook for 5 minutes or till the rice is done.

Step 7

Add slurry and vinegar, mix, cover and cook for 1 minute.

Step 8

Serve hot with fried noodles.
