Fancy Biryani Ingredients  2 cups long grain rice  2 cups coconut milk  6-8 drumsticks 1 medium brinjal, cut into thin pieces 100 gms ashgourd,peeled & cut in to cubes 2-3 bay leaves 1 tsp garam masala powder Half up cashew nuts 1 tsp salt Half cup oil   Method of preparation 1. Heat oil in a 2-litre pressure cooker and stir in the vegetables, garam masala powder, cashewnuts and half the quantity of salt. Add ½ cup of coconut milk and pressure cook for 1 minute.  2. Clean, wash and pressure cook rice with 2 cups of coconut milk in the cooker, for 10 minutes. 3. Mix the rice and the vegetables and the remaining quantity of salt 4. Serve hot garnished with sliced cucumbers and beetroot.
