Preparation time: 12 minutes; plus chilling  Cooking time: 1 hour 35 minutes Oven temperature: 200 C (400 F), Gas Mark 6 Ingredients as above 4 baking potatoes  1 egg white 2 teaspoons extra Cajun seasoning  Follow the main recipe and leave the seafood salad chill.  Wash the potatoes and pat dry with kitchen paper. Prick all oven with a fork. Brush the potatoes with A little beaten egg white and then sprinkle with the Cajun seasoning. Bake in a preheated oven, 200 C (400 F), Gas Mark 6, for 1/1/2 hours. (To reduce the cooking time thread the potatoes on to a metal skewer.) Once cooked, cut a cross in the top each baked potato. Fill with the chilled seafood and serve on a Bed of salad leaves
